I’m on day 10 of a 30 day cleanse and restore. No gluten. No alcohol. No coffee. No dairy. No Sugar. No soda……Eating whole foods and taking a whole slew of supplements and essential oils to help filter out the toxins from my body!! I have to say I am quite proud of myself and it really hasn’t been that hard or dreadful. Other than the major caffeine withdrawal headache I got I think it was 2nd day. That wasn’t pleasant. I have followed this pretty strictly although a few mishaps – like eating grapes and watermelon after realizing they weren’t on approved fruit list. And also on my own account having saki with beer at Sushi on Friday night! I knew full well going in to the restaurant I was going to partake in a beverage. Or two? 🙂
It’s ok I’m doing awesome. Back on track. I will do a post about the cleanse and details of it soon. I have been wanting to do one for quite awhile and I know my poor body needs it. It works so hard for me and all I put it through!
Quinoa, Black Bean & Sweet Potato Salad
I went to lunch a few days ago and was inspired by a salad I had at the restaurant Roosters and made my own version that night with what I had and I actually think mine won. WINNER!!! It was so good – I had it for dinner and again for lunch the next day. And can’t wait to have it again.
Here’s what was in it.
Mixed Quinoa ( I prefer the blend variety of quinoa vs. only pale color)
Greens – Lettuce, spinach, kale whatever you’ve got.
Cooked Sweet Potato
Fresh homemade salsa
With or without seasoned chicken breast. Either way – fantastic.
At the restaurant the salad was served with two sides of a lite berry vinaigrette dressing.
So i brought home my second I didn’t use. It sounds strange with this type of salad I think but it really was very good. A ranch dressing would be good too.
I have had a lot of food prep done for the week with my cleanse I am doing. It makes is so much easier to choose healthy foods when it’s time to eat. I already had a batch of quinoa cooked, the sweet potatoes were cooked. I peeled and sliced them in round circles and baked in the oven for probably 15 mins? They were brushed with coconut oil and a little garlic salt before cooking. Those are perfect like that fresh out of the oven. I had left overs in fridge. Salsa was made just in Kitchenaide food processor . So much better than store bought! Chicken Breast I either grill, cook on stove or throw in the crock pot to have on hand.
